ドイツでは、収穫されたブドウの糖分が一定の基準を満たすと、そのブドウで造られたワインのラベルには 
Prädikat と呼ばれる公的な「お墨付き」を表示できるそうですが、一方で、Prädikat は必ずしもワインの品質を表さないなど、問題もあるそうです以下は、この Prädikat というお墨付きについての一節です。

what it dreamed, they made true は OSVC という語順の倒置文です。realized、dreamed と過去形になっているのは、先頭に Could が使われていることによる時制の一致と捉えるとよいでしょう。

realize はここでは「気づく」ではなく「具現化する」という意味です。

チェコの作家フランツ・カフカ(1883-1924)は、ヨーロッパの状況を憂える友人に「我々が見知っているこの世界を超越した hope というものは存在するのだろうか」と尋ねられた際に、「たくさん、いや、無限に存在するといっていい。だが我々にとって存在するわけではない」という、解釈の余地を残す答え方をしたそうです。以下は、この答えを受けての著者イーグルトンの(少しユーモアを込めた)推測です。

he はカフカのこと、off と dyspeptic はともに「機嫌の悪い」、dire は「ひどい」
