ドリアンが婚約者に冷酷な仕打ちをした夜、自宅に戻った彼は、自室に置いてある自分の肖像画の美しい口元に冷たい影が生じているのに気づきます。ドリアンは恐れを抱きながらも、自分の心と肖像画の絵の具の間に何らかのつながりがあるのではないかと興味を持ちます。以下は、そのときにドリアンが考えたことを伝える文です。

that soul は「ドリアンの心」、they は「肖像画の絵の具を構成する物質」を指しています。

Could it be that S V? で「SVということなのだろうか？」。it は状況を指しているとも言えます。

what that soul thought, they realized は OSV、

what it dreamed, they made true は OSVC という語順の倒置文です。realized、dreamed と過去形になっているのは、先頭に Could が使われていることによる時制の一致と捉えるとよいでしょう。

realize はここでは「気づく」ではなく「具現化する」という意味です。

「自分の心が思うことをそれらが具現化するのだろうか。自分の心が夢見ることをそれらが実現するのだろうか」

以下は、コルシカ島のワインを紹介する文章の一部です。コルシカ産のワインには、その土地固有の品種など、様々な個性的な品種のブドウが使われているそうです。その主な品種の名前をひと通り挙げた後に以下の文が続きます。

cast of characters は「演劇などを演じるキャスト」を表すフレーズです。この文では、コルシカのワインを作り出す個性豊かなブドウたちを、一緒に劇を演じるキャストに見立てています。

make for ~ は「～を可能にする／～を作るのに役立つ」といった意味の句動詞。

whose は wines を先行詞とする所有格の関係代名詞で、関係代名詞の節は whose から始まっています。元になっているのは、

~'s like will not be found elsewhere on earth.
（～に似たものは、地球上のどこにも見当たらない）

という文。like はここでは「似たようなもの」という意味の名詞です。
