以下は、前回の記事で紹介した文のすぐ後に続く文で、前回と同じく、貴族の青年であるドリアン・グレイが、退廃的な考えに染まりながらも、社交界においては貴族としての振る舞いを保っていた様子を描く文章の一部です。文頭の His はドリアンのこと、settling はここでは preparing とほぼ同じ、Lord Henry はドリアンの友人です。

which は His little dinners を先行詞とする非制限用法の関係代名詞で、関係代名詞の節が始まるのは in から。in the settling of which Lord Henry always assisted him の部分全体が関係代名詞の節です。元になっているのは、

(Lord Henry は~の準備において常に彼に手を貸した)

という文。the ~ing of ... で「...を~すること」。「~ing」と「...」の間には、VO の関係が隠れています。

be noted as much for A as for B で「Bのためと同じくらいAのために注目される」。

the careful selection and placing of those invited の careful は、selection と placing の両方を修飾しています。placing の ing は上と同じ 
the ~ing of ...(...を~すること)の使い方。place O の基本の意味は「Oを(ある場所に)置く」で、ここでは「テーブルでのOの席順を決める」という意味です。

文章の一部です。コルシカ産のワインには、その土地固有の品種など、様々な個性的な品種のブドウが使われているそうです。その主な品種の名前をひと通り挙げた後に以下の文が続きます。

It は形式主語で、本当の主語は that 以下。It can safely be said that S V. で「SVと言って差し支えない」といった意味になります。

cast of characters は「演劇などを演じるキャスト」を表すフレーズです。この文では、コルシカのワインを作り出す個性豊かなブドウたちを、一緒に劇を演じるキャストに見立てています。

make for ~ は「~を可能にする/~を作るのに役立つ」といった意味の句動詞。

whose は wines を先行詞とする所有格の関係代名詞で、関係代名詞の節は whose から始まっています。元になっているのは、

(~に似たものは、地球上のどこにも見当たらない)

that sickness の that は、sickness が後ろから関係詞の節で修飾されていることを示しています。which は sickness を先行詞とする関係代名詞。

元になっているのは「it is true of ~ that S V」(~に関しては、SVということが真実である)という文で、it is true の it は形式主語、that節が本当の主語です。

be true of ~ は、「~に当てはまる」といった意味で説明されることが多いですが、ここでは文字通りに「~に関しては真実である」という意味で捉えると、より分かりやすいかもしれません。

先頭の it は形式主語、本当の主語は never to have had it。完了形の不定詞(to have + 過去分詞)は、過去形や完了形と同等の意味を持ちます。
