throw open to the world his beautiful house においては、open to the world がC、his beautiful house がO。これは、throw O C(OをCの状態にする)のOとCを入れ替えたものです。

文の構造だけでなく、cheese trolley(フレンチレストランで使われるチーズのワゴン) に the が使われている理由も考えてみてください。

「今度フレンチレストランできちんとした食事をするとき、チーズのワゴンが運ばれてきたら、注意深く観察してみてください」

著者は「フランスのレストランでフルコースの食事をすると、通常、終わりの方でチーズのワゴンが運ばれてくる」ということを前提としてこの文を書いています。この前提があるために、コースの一部として食事の最後の方で運ばれてくるはずのチーズのワゴンを指して、cheese trolley に the がつけられています。


and, if you are lucky, you may spot, lurking near the back, a boulette d'Avesnes.

lurking near the back はC、a boulette d'Avesnes がO。前回と同様、主語以下は VCO で、VOC(第5文型)の倒置です。spot O ~ing で「Oが~しているのを見つける」。

「そうすると、運が良ければ、ブーレット・ダヴェーヌというチーズがワゴンの奥の方にひそんでいるのが見えるかもしれません」

ちなみに分詞構文では、分詞構文の意味上の主語は主節の主語と一致しなければならないので、lurking ~ の部分を分詞構文ととらえることはできません。
